I'm A Little Sandwich, Short and Tasty
For lunch the boyfriend made himself a Ruben (Reuben?). I did not. I made myself a sandwich that had one Reuben (Ruben?) like feature but then became something else entirely. This sandwich was made of: one whole wheat English muffin, one knife spread of mayo, one of pesto and one of dijon mustard, a slice of tomato, a bit of thinly sliced smoked turkey, a bit of corned beef and some cheddar cheese--all toasted in the toaster oven.
