Finding the New Cheese
A slight mistake when purchasing cheese at Costco has led me to learn about a cheese I previously knew nothing about: BURRATA.

because man oh man, when it's good, it's GOOD!!!!
i dont know anything about the brands of cheese available at costco; i'll hope the burrata gods were watching over you during the purchase. it pretty much has to be ULTRA-fresh to guarantee optimal creamy awesomeness.
Now I have to go look at our local Costco to see if it is there. Once I get my refrigerator in...no point in buying anything til that happens!!! Unless I go get it today for pool party, assuming no rain and a daytime high of more than 80!!!! The cooling off is lovely so I am not complaining.
i mean. it was so unexpected. i take out what i think is a ball of mozzarella, but it's got this weird creamy consistency on the inside...but tastes good, not curdled. so weird...then i really looked at the container and realized taht just because it's in water and looks like mozzarella, doesn't mean it's exactly mozzarella. Tonight i'm going to slice up a tomato and let the creamy cheese ooze all over it. It will be amazing.
