Luxury Eggs

On two separate occasions last week, one lunch, one dinner, I made the same dish because it was just that good. Simple, but powerful. Three eggs, scrambled with chopped tomatoes, sea salt and chopped cilantro, with a few slices of truffle cheese strategically placed throughout.
Absolute heaven. I find eggs continue to be my go-to foodstuff. There are just so many great things about them. I mean really.

I fully concur.
Eggs in all their glorious variety (maybe excluding hard hard boiled eggs) are one of the reasons why I like elaborate breakfasts so much.
