Faux Curry

Last weekend I made myself a little curry-like dinner that lasted me most of the week. A mix of corn, shelled edamame, onion and potatoes in a little chicken broth/coconut milk mixture, and seasoned with cumin, garlic, garam masala (spelling, I know), ginger, turmeric, salt and pepper.
Served over rice. It could have been spicier. Maybe next time.
