Eggs in a Basket with Cilantro Pesto and Idiazabal Cheese
In the morning hours I made 'eggs in a basket' for breakfast. This consisted of buttered whole wheat bread slices thrown into a skillet with a good chunk of their middles removed so to better be filled with farm fresh eggs. I then topped them off with lemon cilantro pesto and idiazabal cheese. I'm telling you, this was a tasty treat. Unless you may or may not have an allergy to either eggs or gluten. Then it would be a disaster.

Confession: I've never eaten eggs in a basket (nor seen any in real life). I desparately want some now. And I'm pretty confident that this is a desire that can be fulfilled. :)
