Miso Soup

I went on a quick shopping trip the other day. I went to Golden Pacific Market and got myself some miso paste. The real deal. I've never used it. Well, that's not true. I tried some sort of red miso paste in an apartment I was subletting and I didn't like it. This stuff doesn't taste like that stuff and it does a pretty good job of it. Maybe it's because I didn't put in scallions? Miso soup isn't usually served with udon noodles but I like to break with tradition. Or something.
I also put in dried seaweed which quickly rehydrated to triple its original size. Some ingredient was missing and it wasn't bonito. Not as salty? Not as misoey?
