Mushroom & Spinach Lasagna c/o Me

This, right here, is the mushroom and spinach lasagna I made last Sunday. Or the Sunday before last Sunday. It was not without its labor. I sauteed the mushrooms with garlic and a Vidalia onion. I made my best approximation of Bechamel sauce. Which I think others call white gravy. And I put spinach in the Cuisinart with olive oil and salt and lemon. And parmesan cheese.
I boiled the noodles before putting them in the casserole. When I've used the 'use them dry' lasagna noodle products, the noodles are never properly soft all around the final product. They dry out if not in direct contact with copious amounts of liquid.
Some of the mushrooms I kept as cut, but others I pureed to mix in with the mozzarella and bechamel element on each layer. I alternated layers so that all had a Bechamel, mozzarella and mushroom component, but that some had a higher concentration of the spinach mixture.
The whole thing needed a little salt. But I have to say it was pretty good.

Portobello Mushrooms, Spinach and Spring Onions With Red Wine Vinegar Finish

Every Thursday my coworkers and I walk to the nearby farmer's market and buy ourselves produce. Most often I find myself at the Mennonite/Amish stand. At one point I bought spinach, spring onions and green beans. And later on, with the help of Whole Foods Portobello mushrooms, I made a little red wine vinegar garlicky goodness spinach, spring onion and mushroom stir fry. Seriously, it was much better than I thought it would be. I was quite pleased with myself.
Also, have I mentioned my most recent obsession? Battlestar Galactica, that's what it is. Shame, I feel none of it. Saul Tigh's wife is a bi-atch.

A Salad Day

Sunday was not the best day for me. I felt very wonky and pretty much stayed in bed and slept the day away. The next day, Monday, I regained my health (I think it was a case of the 24 hour hour consumption) and thought that it was time to eat something. I made a spinach salad and topped it with a bit of Mom's left over potato salad.

Lamb Rack & Fixins

A few days back my mother made a rack of lamb or maybe they were short ribs? I don't know and I just asked my mother...but then realized that she's in the shower and can't hear me...which made me feel a bit foolish, talking to nobody. We all commented that they were fattier than many a lamb rib (or whatever) we had had, but the meat itself was very good. As were the freshly cooked tomatoes, spinach and baked potatoes. And the wine was nice too.
My mother sears the lamb then puts it into the oven. I will try this in the future.

Some time in the past week I made a quick dinner: sauteed spinach with garlic and cumin over thick spaghetti with good parmesan cheese slivers.

Moist Chicken

A few nights back C. made delicious chicken. Moist and marinated in ginger, sugar and (I think) a little soy sauce. Served alongside basil rice and spinach. It succeeded where my own chicken failed. It seems the secret was lightly searing the chicken in a pan before baking it. I will definitely try this at some point.

First Meal and the Beginning of Many, Many Posts

After a slightly delayed arrival in Georgia I sat down to a lovely dinner of spinach and wild duck and rice...I also got to participate in a three night long wine tasting. I also got confirmation about that funny feeling spinach leaves on the back of one's bottom teeth. I've been noticing this rather unpleasant (though not horrendous) side effect to the vegetable for a long time but no one ever knew what I was talking about...that changed and I feel more whole.
